Crock Pot Cuban Black Bean and Fish Soup

2 15 oz cans black beans
2 (14 1/2 ounce) cans chicken broth
1 (14 1/2 ounce) can diced tomatoes
1 (4 ounce) can diced green chilies (or 10oz Rotel Tomato and Green Chiles)
8 ounces cod, cut into 1 inch pieces
1/2 cup onion, minced
2 garlic cloves, minced
2 tablespoons red wine vinegar
1 teaspoon dried oregano
2 teaspoons dried thyme
2 teaspoons ground cumin
1/2 teaspoon ground black pepper


Easy Low Carb Crock Pot Fish Gumbo

1 lb. fish fillets
1 package (12-ounce) frozen shelled deveined cooked medium shrimp, rinsed
could add crab meat as well,
2 Tofurkey Italian sausage
2 beef bouillon cube
1 c. chopped onion or scallions or pearl onions
1 chopped green pepper
1 tbsp. parsley flakes
1 tbsp. minced garlic
1 tbsp. flour
1/2 tsp. chili powder
1 tsp. paprika
Dash cayenne or hot sauce
1 (1 lb.) can tomato wedges
1 (8 oz.) can tomato sauce
1 (10 oz.) pkgs. cut okra,
1 cup uncooked wild long-grain rice
4 cups water
tsp lemon juice optional

Crock Pot Lentils

Crock Pot Lentils
1 ½ cups dry lentils, rinsed and picked over
1 can chick peas, rinsed
1 onions, chopped
2 cloves garlic, minced
1 large canned tomatoes, with liquid
3 ½ cups low sodium vegetable broth
2 large carrots, sliced
1 bell pepper, chopped
½ teaspoon garam marsala
½ teaspoon cumin
¼ teaspoon cinnamon
¼ teaspoon paprika
Put everything in the pot with lentils and chick peas in first. Mix well. Turn crock pot on high for 3 hours or low for 6 hours.

Eat as made or use a hand mixer and mix until chunky.

You can add Tofurkey pre-cooked sausage and heat in the microwave.
