Crock Pot Lentils
1 ½ cups dry lentils, rinsed and picked over
1 can chick peas, rinsed
1 onions, chopped
2 cloves garlic, minced
1 large canned tomatoes, with liquid
3 ½ cups low sodium vegetable broth
2 large carrots, sliced
1 bell pepper, chopped
½ teaspoon garam marsala
½ teaspoon cumin
¼ teaspoon cinnamon
¼ teaspoon paprika
Put everything in the pot with lentils and chick peas in first. Mix well. Turn crock pot on high for 3 hours or low for 6 hours.
Eat as made or use a hand mixer and mix until chunky.
You can add Tofurkey pre-cooked sausage and heat in the microwave.
